Josh was to bring treats to an FFA meeting this past week but the meeting got cancelled because school was cancelled due to the ice. Shucks! We had to eat these ourselves. :) Although, I found out his meeting is now tomorrow night. I might have to salvage a few pieces for him to take or just make another pan of them.
1st layer:
2 c. sugar
2 c. flour
1 c. butter
1/4 c. cocoa
1 c. water
1/2 c. buttermilk or 2 T. vinegar in 1/2 c. milk
2 eggs, beaten
1 t. soda
1 t. vanilla
1 t. red coloring
Mix sugar and flour in bowl. Cook butter, cocoa and water to boiling. Pour this over sugar and flour mixture. Add buttermilk, eggs, soda, vanilla and coloring. Pour this in greased jelly roll pan. Bake at 400 degrees for 20 minutes.
2nd layer:
2 c. powdered sugar
1/8 t. salt
1/3 c. Crisco
1 egg white
1/8 c. (2 T.) melted butter
1/4 t. vanilla extract
1/4 t. almond extract
Beat until creamy and spread over cooled cake. Let that set up in the fridge.
3rd layer:
1 c. sugar
6 T. margarine
1 c. powdered sugar
6 T. milk
2/3 c. chocolate chips
Boil sugar, margarine and milk for 1 1/2 minutes. Add chocolate chips and beat until cool and thick. Add 1 to 2 c. powdered sugar. Spread over filling and allow to cool before serving.
