Every year, during Thanksgiving weekend, Jeff's mom hosts a cookie decorating & candy making day for the daughters/daughter-in-laws. We all bring already cut out and baked sugar cookies and ingredients to make some candy. We decorate the cookies in the morning (see my cut out sugar cookie recipe under the bars & cookies label) and make the candy after lunch. Butterscotch Nibbles is one of the candy's we make every year. Good thing this is easy to make because I have to make it lots during the holiday season. It goes so fast!
1 12 oz. pkg. butterscotch chips
1 c. peanut butter
8 c. Corn Chex
1 c. chocolate chips
Melt together butterscotch chips and peanut butter. Add Corn Chex. Stir until covered. Add chocolate chips (not melted). Stir until combined. Will look marbled. Spread on 11x17 pan. Cool 30 minutes. Break up. Store in air tight containers.
