This is a recipe I remember from my childhood. My mom would always serve it in the fall when the squashes started appearing in the grocery stores. It is so easy, I don't even have a recipe for it. And if you know me, not having a recipe is something that is a rarity of me.
Take a butternut squash and cut in half. Clean out the seeds and stringy stuff. Then put 1 T. of butter and 1/4 c. brown sugar in each half.
Put the squash on a cookie sheet and bake at 350* for 1 hour.
The squash should be tender when pierced with a fork.
When ready to eat, scoop out the squash on your plate and enjoy!
