Zucchini Bread

We bought some zucchini at the Amish Auction and this is just one of the many things I made with them.



1 c. packed light brown sugar
2 T. sugar
2/3 c. canola oil
2 t. vanilla
2 large eggs
1 1/2 c. flour
1/2 t. baking powder
1/2 t. baking soda
1 1/2 t. cinnamon
3/4 t. nutmeg
1/4 t. ginger
1/8 t. ground cloves
3/4 t. salt
1 3/4 c. grated zucchini

Preheat oven to 350*.  Grease and flour a 9x5x3" loaf pan; set aside.  In large bowl, whisk together the two kinds of sugar, oil, vanilla and eggs.  In small bowl, blend flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves and salt.  Add this flour mixture to the egg/sugar mixture and blend well.  Stir in grated zucchini.  Pour batter into the greased and floured pan, spreading evenly.  Bake 45-55 minutes (I can never get my bread to be done after 55 minutes.  It's usually around 60-70 minutes.) or until toothpick inserted in center comes out clean.  Cool in pan 10 minutes; then remove from pan and cool completely before serving.
