What do you get when you help your husband with hogs all day in 9 degree weather going up and down the road on the tractor? One chilled to the bone wife!! Boy was I cold when I got inside! So, we had soup for supper. It was a great meal for such a bone chilling day.
3 c. diced potatoes
1 t. parsley flakes
1 1/2 c. water - can add more if needed
1 chicken bouillon cube
dash of salt and pepper
1/2 c. diced celery
1/2 c. diced carrots
1/4 c. onion, chopped
2 lbs. hamburger, fried & drained
1 1/2 c. milk
2 T. flour
1/2 lb. Velveeta cheese, cubed
Cooked, homemade-style noodles
Fry the hamburger. While the hamburger is frying, mix and cook all but the milk, flour and cheese in a large saucepan for 20 minutes, covered. Meanwhile, cook the noodles & set aside. Add the milk to flour and blend well. Add this to the vegetables, cooking until thickened. Add hamburger, noodles and cheese. Stir until melted. You will need to add more liquid. Add enough to desired thickness.
