On an extremely cold and wintery evening, the pastors of our church hosted a dinner for all the outgoing and incoming council members. It was an enjoyable evening of fellowship despite the weather conditions. This was one of the cake's that was served. It has such a refreshing taste.
It would make a great Spring dessert.
1 lemon cake mix - made as directed on the box
Cool & top with:
1/2 c. lemon juice
1 can sweetened condensed milk
Mix together with a fork.
Fold in 8 oz. Cool Whip.
Pour over cooled cake.
It may appear to be thin and a little runny but it firms up in the fridge.
