Chicken Salad or Ham Salad Puffs

The "Puffs" are just a cream puff with a few seasonings added in and instead of the pudding filling you just add chicken salad or ham salad.

PUFFS
1/2 c. butter
1 c. boiling water
1 c. flour
4 eggs
1/4 t. salt
scant 1/4 t. garlic salt
1/4 t. dill weed

Put butter and hot water in pan over heat, when it boils, remove from fire.  Add all of the flour, beating constantly.  Add eggs 1 at a time and beat well after each addition.  Add in seasonings and mix well.  Drop on a greased pan.  Bake 40 minutes in 400 degree oven.  Turn oven down to 350 degrees until they are brown. (I don't have to do this).  After baked, take out of oven and spray Pam on top of puffs and sprinkle on a little dill weed.  Cool and cut in half.  Fill with chicken salad.





Chicken Salad
3 c. shredded chicken
2 hard cooked eggs, chopped
2 T. finely chopped celery
4 t. sweet pickle relish
salt & pepper to taste
Salad dressing to moisten (You can use Mayonnaise or Miracle Whip but I like to use Salad dressing)

Mix well and scoop into puffs.

Ham Salad
3 c. ground fully cooked ham
2 hard cooked eggs, chopped
2 T. finely chopped celery
4 t. sweet pickle relish
2 t. finely chopped onion
1 c. salad dressing (You can use Mayonnaise or Miracle Whip but I like to use Salad dressing)
1 T. prepared yellow mustard

Mix ham, eggs, celery, pickle relish, and onion together in a bowl.  Combine salad dressing and mustard together in a separate bowl, pour over ham mixture.  Stir to coat.  Scoop into puffs.
