I was asked to serve cookies for the Coffee Break ladies at our church yesterday. I decided to make these cookies because they remind me of spring with the lemon in them. It's kind of a refreshing taste. You have to like a lemon flavor to enjoy these cookies. They are certainly easy!
1 2 layer pkg. pudding recipe lemon cake mix
4 oz. whipped topping
1 egg
1 cup confectioners sugar
Combine cake mix, whipped topping and egg in bowl; mix well. Shape into balls. Roll in confectioners' sugar. Place on greased cookie sheet. Bake at 350 degrees for 13-15 minutes or until light brown. Remove to wire rack to cool.
